  • 1 pound ground turkey
  • 1 can black beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 2 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Olive oil for cooking

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and garlic, cooking until softened.
  3. Add the ground turkey, cooking until no longer pink.
  4. Stir in the black beans, diced tomatoes, chicken broth, cumin, chili powder, salt, and pepper.
  5. Bring to a simmer and cook for about 15-20 minutes, allowing the flavours to meld.
  6. Serve hot.

Notes

This soup is great served on its own or with crusty bread or rice. You can sprinkle fresh herbs or a dollop of sour cream on top for extra flavour. For added heat, consider using chopped jalapeƱos or cayenne pepper. If you prefer a thicker soup, blend a portion and mix it back in.
