- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and garlic, cooking until softened.

- Stir in the black beans, diced tomatoes, chicken broth, cumin, chili powder, salt, and pepper.
- Bring to a simmer and cook for about 15-20 minutes, allowing the flavours to meld.
- Serve hot.
Notes
This soup is great served on its own or with crusty bread or rice. You can sprinkle fresh herbs or a dollop of sour cream on top for extra flavour. For added heat, consider using chopped jalapeƱos or cayenne pepper. If you prefer a thicker soup, blend a portion and mix it back in.
