Ingredients
  

For the apples
  • 6-8 medium medium apples (firm variety, e.g. Granny Smith or Fuji) (washed, dried, stems removed) Choose firm apples to help the candy coating stay put.
  • 6-8 sticks wooden sticks or candy-apple sticks
For the candy coating
  • 2 cups granulated sugar
  • ½ cup light corn syrup Helps give a smooth, shiny finish.
  • ½ cup water
  • to taste Gel food coloring (various colors) (for rainbow effect) Use different colors to create a rainbow effect.
  • 1 teaspoon vanilla extract (optional) Adds a subtle flavor.

Method
 

Preparation
  1. Wash and dry the apples thoroughly. Remove the stems and insert a wooden stick into the top of each apple. Place the apples on a baking sheet lined with parchment paper.
Making the candy coating
  1. In a saucepan, combine sugar, corn syrup, and water. Heat over medium heat and stir until the sugar dissolves.
  2. Bring the mixture to a boil without stirring. Cook until it reaches about 300 °F (hard-crack stage).
  3. Remove from heat. Divide the hot candy syrup into separate bowls and tint each with different gel food coloring to create rainbow colors. Add vanilla extract if using.
Dipping the apples
  1. Working quickly, hold an apple by its stick and dip it into the colored syrup, twisting to coat evenly. For a multicolor or rainbow-style coating, swirl multiple colors or dip sequentially.
  2. Allow excess syrup to drip off, then place the coated apple on the parchment sheet. Let the candy coating harden completely at room temperature before serving.

Notes

To store Rainbow Candy Apples, keep them in a cool and dry place. You can place them in an airtight container to prevent them from getting sticky. Enjoy them within a few days for the best taste and texture.
