Ingredients
  

For the crust
  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter Make sure it's softened for easier mixing.
For the filling
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup fresh lemon juice Fresh is preferred for a brighter flavor.
  • 1 teaspoon lemon zest
  • 1/4 teaspoon salt
  • 1 cup fresh raspberries Fresh raspberries are best, but frozen can be used.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking dish.
  2. In a bowl, mix together the flour and powdered sugar. Cut in the butter until the mixture resembles coarse crumbs. Press into the bottom of the prepared baking dish.
  3. Bake for 15 minutes or until lightly golden.
Filling
  1. In another bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, and salt until smooth.
  2. Gently fold in the raspberries. Pour the mixture over the baked crust.
  3. Bake for an additional 20-25 minutes, or until set.
  4. Let cool before slicing into squares.
  5. Dust with powdered sugar before serving.

Notes

Raspberry Lemon Bars can be served warm or chilled. They can be enjoyed on their own or with a dollop of whipped cream or a scoop of vanilla ice cream.
