  • 2 medium Apples cored and diced
  • 3 medium Carrots grated
  • 1/2 cup Dried Cranberries
  • 1/4 cup Walnuts or Pecans chopped (optional)
Dressing
  • 1/4 cup Mayonnaise or Greek Yogurt
  • 1 tablespoon Honey or Maple Syrup
  • 1 tablespoon Lemon Juice
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Black Pepper

Instructions
  1. Prepare the salad ingredients by dicing the apples and grating the carrots; chop nuts if you are using them.
  2. Make the dressing by whisking together the mayonnaise or Greek yogurt, honey or maple syrup, lemon juice, salt, and black pepper.
  3. In a large bowl, combine the prepared apples, carrots, cranberries, and nuts; pour the dressing over and toss gently to coat everything evenly.
  4. Cover the bowl and chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld and develop.
