Ingredients
  

For the crust
  • 1.5 cups all-purpose flour
  • 0.5 cups powdered sugar
  • 0.5 cups unsalted butter, softened
For the filling
  • 1 cup rhubarb, chopped
  • 1 cup cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 0.5 cups granulated sugar for topping

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking dish.
  2. In a mixing bowl, combine flour, powdered sugar, and softened butter until crumbly. Press this mixture into the bottom of the prepared baking dish to form a crust.
Baking the crust
  1. Bake the crust in the preheated oven for 15 minutes.
Filling preparation
  1. In another mixing bowl, beat the cream cheese and granulated sugar until smooth. Add the eggs, vanilla extract, and salt, mixing until well combined.
  2. Fold in the chopped rhubarb and pour the cream cheese mixture over the crust.
  3. Sprinkle the additional granulated sugar on top.
Final baking
  1. Bake for an additional 30-35 minutes, or until the center is set and lightly golden.
  2. Allow the bars to cool before cutting them into squares. Serve and enjoy!

Notes

Ensure that the cream cheese is softened to avoid lumps in the filling. You can add lemon zest for added flavor or use different fruits like strawberries or blueberries instead of rhubarb.
