Ingredients
  

Main Ingredients
  • 2 cups ricotta cheese
  • 1 cup fresh herbs (such as basil, parsley, and thyme), chopped
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • to taste Salt and pepper
  • for drizzling as needed Olive oil
  • 1 package of puff pastry (optional) Can be skipped for gluten-free option

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the ricotta cheese, chopped herbs, eggs, and grated Parmesan. Season with salt and pepper.
  3. If using puff pastry, roll it out and line a baking dish with it. Pour the ricotta mixture into the dish, smoothing the top.
  4. If not using pastry, simply pour the ricotta mixture into a greased baking dish.
  5. Drizzle olive oil on top.
Baking
  1. Bake for about 30-35 minutes, or until the bake is set and golden.
  2. Allow to cool slightly before serving.

Notes

Store any leftovers in an airtight container in the refrigerator for about 3-4 days. Can be reheated in the oven for best texture or frozen for up to 2 months.
