Preparation
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the ricotta cheese, chopped herbs, eggs, and grated Parmesan. Season with salt and pepper.
- If using puff pastry, roll it out and line a baking dish with it. Pour the ricotta mixture into the dish, smoothing the top.
- If not using pastry, simply pour the ricotta mixture into a greased baking dish.
- Drizzle olive oil on top.
Baking
- Bake for about 30-35 minutes, or until the bake is set and golden.
- Allow to cool slightly before serving.
Notes
Store any leftovers in an airtight container in the refrigerator for about 3-4 days. Can be reheated in the oven for best texture or frozen for up to 2 months.
