Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice the sweet potatoes into rounds, about 1/4 inch thick.
  3. Toss the sweet potato rounds with olive oil, salt, and pepper.
Baking
  1. Arrange the rounds on a baking sheet and bake for 20-25 minutes until tender and golden.
  2. Remove from the oven and drizzle honey over the sweet potato rounds.
  3. Sprinkle crumbled feta cheese on top and return to the oven for an additional 5 minutes.
  4. Garnish with fresh herbs before serving.
