  • 1 (11 oz) box Mini Nilla Wafers
  • 1 (8 oz) bag Rolos
  • 2 cups chocolate chips
  • 2 tablespoons vegetable oil

Method
 

  1. Preheat the oven: Set the oven to 300°F (150°C) and line a baking sheet with parchment paper or a silicone mat.
  2. Assemble the base: Arrange half of the Mini Nilla Wafers on the baking sheet, flat side up. Place a Rolo candy on top of each wafer.
  3. Soften the Rolos: Bake in the oven for about 90 seconds—just until the Rolos are soft but not melted.
  4. Sandwich: Immediately top each softened Rolo with another Nilla Wafer to make a sandwich. Gently press down.
  5. Chill: Transfer the baking sheet to the fridge for about 10 minutes to let the Rolos firm up again.
  6. Melt the chocolate: In a microwave-safe bowl, combine chocolate chips and vegetable oil. Heat in 30-second intervals, stirring between each until smooth and melted.
  7. Dip the sandwiches: Using a fork or spoon, dip each Rolo sandwich into the melted chocolate. Let the excess drip off and return it to the lined baking sheet.
  8. Set and serve: Place the tray back in the fridge until the chocolate coating is firm. Serve chilled and enjoy!
