  • 1 can Rotel tomatoes (diced, with green chilies)
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Cook the rotini pasta according to package directions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat.
  3. Stir in Rotel tomatoes and garlic powder; cook for 2-3 minutes.
  4. Add cream cheese and stir until melted and well combined.
  5. Mix in the cooked pasta and cheddar cheese; stir until the cheese is melted and everything is well mixed.
  6. Season with salt and pepper to taste.
  7. Serve warm and enjoy!

Notes

For extra flavor, add chopped onions and bell peppers when cooking the ground beef. For a spicier touch, use hot Rotel tomatoes instead of mild. Stir quickly when mixing in the cheese to ensure it melts well.
