  • 1 lb Ground Italian sausage mild or hot
  • 4 medium Potatoes peeled and diced
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 6 cups Chicken broth
  • 1 cup Heavy cream
  • 4 cups Kale chopped, stems removed
  • 1 tbsp Olive oil
  • to taste Salt
  • to taste Black pepper

Method
 

Preparation
  1. In a large pot, brown the Italian sausage over medium-high heat, breaking it apart; drain fat and set aside.
  2. Add olive oil to the pot, sauté chopped onion until soft, then stir in minced garlic for one minute until fragrant.
  3. Return sausage to the pot, add diced potatoes and chicken broth, then bring to a boil before simmering until potatoes are tender (15-20 minutes).
  4. Once potatoes are tender, stir in heavy cream and chopped kale; cook until kale wilts.
  5. Season the soup with salt and black pepper to taste; serve hot.

Notes

For a thicker soup, you can mash some of the cooked potatoes before serving. Adjust the seasoning to your taste, adding more salt or pepper as needed.
