- In a large pot, brown the Italian sausage over medium-high heat, breaking it apart; drain fat and set aside.
- Add olive oil to the pot, sauté chopped onion until soft, then stir in minced garlic for one minute until fragrant.
- Return sausage to the pot, add diced potatoes and chicken broth, then bring to a boil before simmering until potatoes are tender (15-20 minutes).
- Once potatoes are tender, stir in heavy cream and chopped kale; cook until kale wilts.
- Season the soup with salt and black pepper to taste; serve hot.
Notes
For a thicker soup, you can mash some of the cooked potatoes before serving. Adjust the seasoning to your taste, adding more salt or pepper as needed.
