Ingredients

  • 1 block firm tofu
  • 2 cups kale, chopped
  • 1 cup bell peppers, diced
  • 2 medium potatoes, diced
  • 1 medium avocado, sliced
  • salsa or hot sauce, to taste
  • tortillas
  • salt and pepper, to taste
  • olive oil for cooking

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced potatoes with olive oil, salt, and pepper, and roast in the oven for about 20-25 minutes until crispy.
Cooking
  1. Crumble the tofu into a pan and cook over medium heat.
  2. Add the chopped kale and bell peppers, season with salt and pepper, and cook until the vegetables are tender, about 5-7 minutes.
  3. Warm the tortillas in a separate pan or microwave.
Assembling
  1. Assemble the burritos by placing a portion of the tofu mixture, roasted potatoes, and sliced avocado on each tortilla.
  2. Add salsa or hot sauce to taste, then roll up the tortillas.
Serving
  1. Serve immediately, or wrap for meal prep and freeze.

Notes

For extra flavor, try adding spices like cumin or paprika to the tofu mixture. Use different vegetables like spinach, zucchini, or mushrooms based on your preference. If you like your burritos spicy, don’t hold back on the hot sauce!
