Ingredients
  

For the Cookies
  • 1 cup 1 cup powdered sugar
  • 1/2 cup 1/2 cup + 5 tbsp salted butter, softened Make sure butter is softened to room temperature.
  • 1 large 1 egg
  • 1 large 1 egg yolk
  • 2 teaspoons 2 tsp pure vanilla extract
  • ¾ cup ¾ cup finely ground almond flour Can substitute with more all-purpose flour if needed.
  • 2 cups 2 cups all-purpose flour
  • ½ teaspoon ½ teaspoon baking powder
  • ½ teaspoon ½ teaspoon pink salt
For the Filling
  • 1 ½ cups 1 ½ cups Hazelnut Spread

Method
 

Preparation
  1. Cream together the softened butter and powdered sugar in a large bowl.
  2. Add the egg, egg yolk, and vanilla extract, and mix until smooth.
  3. Stir in the almond flour, all-purpose flour, baking powder, and pink salt until everything is combined.
  4. Chill the dough in the refrigerator for about an hour.
Baking
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Roll out the dough and cut it into desired shapes using cookie cutters.
  3. Bake for 10-12 minutes or until the edges are lightly golden.
  4. Allow the cookies to cool completely.
Assembly
  1. Spread Hazelnut Spread between two cookies to create a sandwich.

Notes

Store in an airtight container at room temperature for up to a week. Best enjoyed fresh. Dust with powdered sugar before serving for an extra touch.
