  • 1 lb Shrimp peeled and deveined
  • 2 cups Broccoli florets
  • 1 cup Carrots julienned
  • 1 Bell pepper sliced (any color)
  • 1 cup Snow peas
  • 2 Garlic minced
  • 1 tbsp Fresh ginger grated
  • 2 tbsp Vegetable oil
Stir-Fry Sauce
  • 1/4 cup Soy sauce
  • 2 tbsp Chicken broth
  • 1 tbsp Brown sugar
  • 1 tsp Cornstarch
  • 1 tsp Sesame oil

Method
 

Preparation
  1. Prepare the vegetables by chopping the broccoli, julienning carrots, slicing the bell pepper, and mincing the garlic and ginger.
  2. Whisk together the soy sauce, chicken broth, brown sugar, cornstarch, and sesame oil in a small bowl to create the stir-fry sauce.
Cooking
  1. Heat vegetable oil in a large wok or skillet over medium-high heat. Add shrimp and cook for 2-3 minutes until pink and opaque; remove from pan.
  2. Add broccoli, carrots, and bell pepper to the wok, stir-fry for 3-5 minutes until crisp-tender. Add snow peas, garlic, and ginger, and cook for another minute until fragrant.
  3. Return the cooked shrimp to the wok with the vegetables. Pour in the prepared stir-fry sauce and cook, stirring constantly, until the sauce thickens and coats all ingredients, about 1-2 minutes.
  4. Serve immediately, optionally over rice or noodles.

Notes

For extra spice, add a pinch of red pepper flakes with the garlic and ginger. You can also customize the vegetables based on what you have on hand.
