Preparation
- Prepare the vegetables by chopping the broccoli, julienning carrots, slicing the bell pepper, and mincing the garlic and ginger.
- Whisk together the soy sauce, chicken broth, brown sugar, cornstarch, and sesame oil in a small bowl to create the stir-fry sauce.
Cooking
- Heat vegetable oil in a large wok or skillet over medium-high heat. Add shrimp and cook for 2-3 minutes until pink and opaque; remove from pan.
- Add broccoli, carrots, and bell pepper to the wok, stir-fry for 3-5 minutes until crisp-tender. Add snow peas, garlic, and ginger, and cook for another minute until fragrant.
- Return the cooked shrimp to the wok with the vegetables. Pour in the prepared stir-fry sauce and cook, stirring constantly, until the sauce thickens and coats all ingredients, about 1-2 minutes.
- Serve immediately, optionally over rice or noodles.
Notes
For extra spice, add a pinch of red pepper flakes with the garlic and ginger. You can also customize the vegetables based on what you have on hand.
