  • 1.5 pounds Potatoes (diced, Yukon Golds preferred) Diced into small cubes for even cooking.
  • 6 cloves Garlic (minced)
  • 0.5 cup Butter (melted)
  • 1 cup Beef Broth (use low-sodium for better control)
  • 2 tbsp Worcestershire Sauce
  • 1 tsp Salt (adjust to taste) Adjust salt to personal preference.
  • 0.5 tsp Pepper (freshly ground)
  • Fresh parsley (optional for garnish) For garnish before serving.

Method

Preparation
  1. Begin by trimming and cutting the beef chuck roast into bite-sized pieces.
  2. Peel and dice the Yukon Gold potatoes into small cubes.
  3. In a bowl, combine the melted butter, minced garlic, beef broth, Worcestershire sauce, salt, and pepper.
Cooking
  1. Place the beef pieces in the slow cooker first.
  2. Add the diced potatoes on top.
  3. Pour the butter and garlic mixture over the beef and potatoes, ensuring everything is well-coated.
  4. Set your slow cooker to low and let it cook for 6 to 8 hours, or until the beef is fork-tender.
Serving
  1. Once done, give everything a gentle stir.
  2. If desired, sprinkle with fresh parsley before serving.
  3. Serve hot, directly from the slow cooker.

Notes

For extra flavor, consider searing the beef in a pan before adding it to the slow cooker. Adjust the seasoning to your liking, and consider adding carrots or peas for more variety.
