Ingredients
  

Cookies
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup unsalted butter (softened) Ensure butter is softened to room temperature.
  • 1 cup granulated sugar
  • 1 large egg (room temperature)
  • 1 Tbsp vanilla extract
  • 1/4 tsp almond extract (optional)
  • 1/4 cup Christmas jimmies sprinkles
Frosting
  • 1 1/4 cups full-fat cream cheese (softened)
  • 3/4 cup salted butter (softened)
  • 2 tsp vanilla extract
  • 1 1/4 cups powdered sugar (sifted)
  • 1/3 cup heavy cream (very cold)
  • 1/4 cup Christmas sprinkles (for decorating)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix the flour, baking powder, and salt. Set aside.
  3. In another bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy.
  4. Beat in the egg, vanilla extract, and almond extract (if using). Mix until well combined.
  5. Gradually add the flour mixture to the wet ingredients. Stir until combined. Fold in the Christmas jimmies sprinkles.
  6. Scoop the dough onto the prepared baking sheet, spacing them out evenly.
Baking
  1. Bake for about 10-12 minutes or until the edges are golden but the centers are still soft.
  2. Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
Frosting
  1. In a separate bowl, beat the softened cream cheese and salted butter until smooth.
  2. Add the vanilla extract and sifted powdered sugar. Mix until creamy.
  3. Pour in the cold heavy cream and whip until fluffy.
Serving
  1. Spread a generous amount of the cream cheese frosting on top of the cooled cookies and sprinkle with additional Christmas sprinkles.

Notes

Store cookies in an airtight container at room temperature for up to a week. Baked cookies (without frosting) can be frozen for up to three months. Thaw before serving and add frosting afterward. Make sure your butter is softened for the best texture, and don’t overmix the dough.
