Preparation
- Preheat your oven to 375°F (190°C).
- In a small bowl, stir together the flour, baking soda, and baking powder.
- In a larger bowl, cream together the softened butter and white sugar until smooth.
- Beat in the egg, then stir in the vanilla and almond extracts.
- Gradually blend the dry ingredients into the creamed mixture.
- Roll rounded teaspoonfuls of dough into balls and place them on ungreased cookie sheets. Flatten each ball with the bottom of a glass and decorate with sprinkles if desired.
Baking
- Bake in the preheated oven for 8 to 10 minutes, or until the edges are golden.
- Allow the cookies to cool on wire racks before decorating with royal icing.
Notes
Store cookies in an airtight container for up to a week. For longer storage, freeze cookies separated by parchment paper in a freezer-safe container. Don't overmix the dough after adding dry ingredients to keep cookies soft. Chill dough for 30 minutes for thicker cookies.
