  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened Ensure butter is at room temperature.
  • 1 1/2 cups white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 3 to 4 tablespoons milk Adjust for desired dough consistency.
Decoration
  • 1 batch Royal icing For decorating.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, stir together the flour, baking soda, and baking powder.
  3. In a larger bowl, cream together the softened butter and white sugar until smooth.
  4. Beat in the egg, then stir in the vanilla and almond extracts.
  5. Gradually blend the dry ingredients into the creamed mixture.
  6. Roll rounded teaspoonfuls of dough into balls and place them on ungreased cookie sheets. Flatten each ball with the bottom of a glass and decorate with sprinkles if desired.
Baking
  1. Bake in the preheated oven for 8 to 10 minutes, or until the edges are golden.
  2. Allow the cookies to cool on wire racks before decorating with royal icing.

Notes

Store cookies in an airtight container for up to a week. For longer storage, freeze cookies separated by parchment paper in a freezer-safe container. Don't overmix the dough after adding dry ingredients to keep cookies soft. Chill dough for 30 minutes for thicker cookies.
