  • 2 lbs Yellow Squash
  • 1 Onion medium
  • 1/4 cup Butter melted
  • 1 can Cream of Mushroom Soup (10.5 oz)
  • 1/2 cup Sour Cream
  • 1 cup Cheddar Cheese shredded
  • 1 sleeve Ritz Crackers crushed
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Method
 

Steps
  1. Preheat oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  2. Slice yellow squash and chop the onion.
  3. In a large pot, boil the squash and onion until tender, then drain thoroughly.
  4. Combine the drained squash and onion with melted butter, cream of mushroom soup, sour cream, shredded cheddar cheese, salt, and pepper in a large bowl.
  5. Transfer the mixture into the prepared baking dish.
  6. Sprinkle the crushed Ritz crackers evenly over the top of the casserole.
  7. Bake for 25-30 minutes, or until the casserole is bubbly and the topping is golden brown.
  8. Let the casserole cool for a few minutes before serving.

Notes

For extra flavor, you can sauté the onion in a little butter before adding it to the squash mixture.
