  • 4 pieces boneless, skinless chicken breasts Ensure they're evenly sized for consistent cooking.
  • 1 tablespoon olive oil For searing the chicken.
For the Filling

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine chopped spinach, cream cheese, Parmesan cheese, garlic, salt, pepper, and Italian seasoning. Mix well.
  3. Cut a pocket in each chicken breast and stuff with the spinach mixture.
Cooking
  1. Heat olive oil in a skillet over medium heat and sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  2. Transfer the chicken to a baking dish and bake in the preheated oven for 25-30 minutes or until the chicken is cooked through.
  3. Let rest for 5 minutes before serving.

Notes

Best served hot, slice to showcase the colorful spinach filling. Pair with roasted vegetables or a fresh salad. You can add a light sauce or lemon for extra flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months.
