Preparation
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the spinach, zucchini, chickpeas, garlic, olive oil, salt, pepper, oregano, and paprika.
- Transfer the mixture to a greased baking dish and spread it evenly.
- If desired, sprinkle shredded cheese on top.
Baking
- Bake in the preheated oven for 25-30 minutes, or until the zucchini is tender and the top is golden.
- Remove from the oven, let cool slightly, and serve warm.
Notes
Store leftovers in an airtight container in the fridge for up to three days. Reheat in the microwave or oven. Customize with additional vegetables or proteins.
