Ingredients
  

For the Cookie Dough
  • 1 cup unsalted butter, softened Make sure it's at room temperature for easy mixing.
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Use gluten-free flour blend for a gluten-free version.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
Additions
  • 1/2 cup chopped maraschino cherries Feel free to substitute with fresh cherries.
  • 1/2 cup chopped pistachios Can be substituted with any nuts of your choice.
  • 1/2 cup chocolate chips Increase for more chocolate flavor.
  • 1/2 teaspoon almond extract Optional for extra flavor.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients until well combined.
  6. Fold in chopped cherries, pistachios, and chocolate chips.
Baking
  1. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  2. Bake for 10-12 minutes or until edges are lightly golden.
  3. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week, or freeze for up to three months. For a chewier cookie, slightly underbake them. These cookies can also be made into a bar format by pressing the dough into a greased baking dish and baking for 15-20 minutes.
