Ingredients

For the Cake
  • 1 box strawberry cake mix
  • 1/2 cup vegetable oil
  • 1 cup water
  • 3 large eggs
For the Frosting and Coating
  • 1/2 cup frosting (strawberry or vanilla)
  • 1 cup white chocolate chips
  • to taste sprinkles or crushed strawberries (for decoration)

Method

Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour a baking pan.
  2. In a large bowl, mix the strawberry cake mix, vegetable oil, water, and eggs until well combined.
  3. Pour the batter into the prepared baking pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  4. Let the cake cool completely, then crumble it into a large bowl.
  5. Add the frosting to the crumbled cake and mix until fully combined.
  6. Roll the mixture into small balls and place them on a baking sheet lined with parchment paper.
  7. Refrigerate for about 30 minutes to firm up.
Coating
  1. Melt the white chocolate chips in a microwave-safe bowl.
  2. Dip each cake ball into the melted chocolate, letting any excess drip off.
  3. Place the truffles back on the parchment paper and decorate with sprinkles or crushed strawberries.
  4. Let them set before serving.

Notes

Make sure to let the cake cool completely before crumbling it; this helps to avoid a messy mixture. Use a cookie scoop for uniform size when rolling the truffles. If the chocolate is too thick, you can add a little bit of vegetable oil to help it melt better.
