Preparation
- Preheat the oven to 350°F (175°C). Grease and flour a baking pan.
- In a large bowl, mix the strawberry cake mix, vegetable oil, water, and eggs until well combined.
- Pour the batter into the prepared baking pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool completely, then crumble it into a large bowl.
- Add the frosting to the crumbled cake and mix until fully combined.
- Roll the mixture into small balls and place them on a baking sheet lined with parchment paper.
- Refrigerate for about 30 minutes to firm up.
Coating
- Melt the white chocolate chips in a microwave-safe bowl.
- Dip each cake ball into the melted chocolate, letting any excess drip off.
- Place the truffles back on the parchment paper and decorate with sprinkles or crushed strawberries.
- Let them set before serving.
Notes
Make sure to let the cake cool completely before crumbling it; this helps to avoid a messy mixture. Use a cookie scoop for uniform size when rolling the truffles. If the chocolate is too thick, you can add a little bit of vegetable oil to help it melt better.
