- Dissolve strawberry gelatin in boiling water in a large bowl. Stir until completely dissolved.
- Add the partially thawed frozen strawberries to the gelatin mixture, stirring gently. Refrigerate for 20-30 minutes until slightly thickened but not set.
- In a separate bowl, beat softened cream cheese with powdered sugar until smooth and creamy.
- Gently fold the whipped topping into the cream cheese mixture.
- Once the gelatin mixture is slightly thickened, fold in the cream cheese and whipped topping mixture, mini marshmallows, and chopped pecans (if using).
- Pour the salad into a large serving bowl and refrigerate for at least 4 hours, or until completely set.
Notes
For best results, ensure the Jello is only slightly thickened before adding other ingredients to prevent lumps. This salad can be made a day in advance.
