- Wash and hull the strawberries, then slice off the bottom to create a flat base. Slice about one-third off the top of each strawberry to form the Santa's hat.
- In a medium bowl, beat the mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy. Transfer the mixture to a piping bag fitted with a star tip.
- Pipe a generous dollop of the mascarpone mixture onto the larger strawberry base to create the Santa's body and beard. Place the strawberry top on top of the mascarpone dollop to form the hat.
- Gently press two mini chocolate chips into the mascarpone for eyes. Affix a mini marshmallow to the tip of the strawberry hat as the pom-pom using a tiny dab of mascarpone if needed.
- Arrange the Strawberry Santas on a platter and chill for at least 15 minutes before serving for best results.
Notes
For an extra festive touch, you can add a tiny drop of red food coloring to the mascarpone mixture. Ensure strawberries are dry before assembly to prevent the cream from sliding. Best served chilled.
