- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

- In a large bowl, cream together the softened butter and sugar substitute until light and fluffy, then beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined, then fold in the rolled oats.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
