Method
 

Steps
  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt.
  3. In a large bowl, cream together the softened butter and sugar substitute until light and fluffy, then beat in the egg and vanilla extract until well combined.
  4. Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined, then fold in the rolled oats.
  5. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, or until the edges are lightly golden, then cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

For best results, ensure your butter is softened to room temperature. Store leftover cookies in an airtight container for up to 5 days.
