  • 2–3 cups cooked chicken (grilled, shredded, or breaded)
  • ½ cup sweet chili sauce
  • 4 large tortillas (flour or whole wheat, gluten-free or spinach wraps optional)
  • 1–2 cups shredded lettuce or cabbage (romaine, iceberg, or coleslaw mix)
  • 1 carrot (julienned)
  • ½ each red bell pepper (sliced thin)
  • ½ each cucumber (sliced into matchsticks)
  • 4 tbsp cream cheese, ranch dressing, or Greek yogurt (optional)
  • Chopped cilantro, green onions, or sesame seeds (optional, for garnish)

Method
 

Preparation
  1. Combine the cooked chicken with the sweet chili sauce in a large bowl. Stir gently until the chicken is well coated in the sauce.
  2. Heat the tortillas in the microwave for about 15 seconds or on a dry skillet until they are soft and pliable.
Assembly
  1. Spread 1 tablespoon of your chosen creamy base evenly across the center of a tortilla.
  2. Add a generous handful of shredded lettuce or cabbage on top of the creamy layer.
  3. Pile the sweet chili chicken mixture on the lettuce.
  4. Layer in the sliced carrot, red bell pepper, and cucumber.
  5. Drizzle a little extra sweet chili sauce over the veggies, if desired.
  6. Fold in the sides of the tortilla, then roll it tightly from the bottom.
  7. Slice in half for easy eating.

Notes

Enjoy immediately or wrap in foil or parchment for a portable meal prep option. Store leftovers in the refrigerator for up to two days. Wrap tightly or use an airtight container to maintain freshness. For added crunch, try adding nuts or spicing it up with jalapeños. You can save time by using store-bought rotisserie chicken.
