  • 2 large sweet potatoes peeled and cubed
  • 4 ounces goat cheese crumbled
  • 1/2 cup walnuts chopped
  • 2 tablespoons olive oil for tossing sweet potatoes
  • Salt and pepper to taste
  • Chives or parsley for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel and chop the sweet potatoes into cubes, then toss them in olive oil, salt, and pepper.
Roasting
  1. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes, or until tender.
  2. While sweet potatoes are roasting, toast the chopped walnuts in a dry skillet over medium heat until fragrant.
Assembly
  1. Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
  2. In a serving dish, layer the roasted sweet potatoes, crumbled goat cheese, and toasted walnuts.
  3. Drizzle with any remaining olive oil and garnish with chives or parsley.
  4. Serve warm.

Notes

Store any leftovers in an airtight container in the refrigerator for up to three days. Reheat in the microwave or oven.
