Preparation
- Preheat your oven to 400°F (200°C).
- Peel and chop the sweet potatoes into cubes, then toss them in olive oil, salt, and pepper.
Roasting
- Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes, or until tender.
- While sweet potatoes are roasting, toast the chopped walnuts in a dry skillet over medium heat until fragrant.
Assembly
- Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
- In a serving dish, layer the roasted sweet potatoes, crumbled goat cheese, and toasted walnuts.
- Drizzle with any remaining olive oil and garnish with chives or parsley.
- Serve warm.
