Ingredients
  

For the Rice Base
  • 1.5 cups White rice uncooked
  • 3 cups Water
For the Taco Meat
  • 1 lb Ground beef or turkey
  • 1 packet Taco seasoning
  • 0.5 cup Water
For Toppings
  • 2 cups Lettuce shredded
  • 1 cup Cheddar cheese shredded
  • 1 cup Diced tomatoes
  • 1 can Black beans rinsed and drained
  • 0.5 cup Corn fresh or frozen
  • 0.5 cup Sour cream
  • 0.5 cup Salsa

Method
 

Cook the Rice
  1. Combine rice and water in a saucepan; bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until water is absorbed and rice is fluffy.
Prepare the Taco Meat
  1. Brown the ground beef in a large skillet over medium heat, draining any excess fat. Stir in the taco seasoning and 1/2 cup water, simmering for 5-7 minutes until the sauce thickens.
Assemble the Bowls
  1. Divide the cooked rice among four bowls, then top each with the seasoned taco meat. Arrange the lettuce, cheese, tomatoes, black beans, and corn over the meat.
Garnish and Serve
  1. Add a dollop of sour cream and a spoonful of salsa to each bowl before serving immediately.
