  • 4 beefsteak tomatoes 4 beefsteak tomatoes (peeled and sliced thin) Use fresh, ripe tomatoes for best flavor.
  • Salt and pepper (to taste) Season according to your preference.
  • 1 tbsp 1 tbsp fresh basil (or one teaspoon dried basil)
  • 2 tbsp 2 tbsp chopped chives
  • 1 cup 1 cup heavy mayo (preferably Duke's)
  • 1 cup 1 cup grated cheddar cheese Can substitute with mozzarella for a different texture.

Method
 

Preparation
  1. Preheat your oven to 400°F.
  2. Evenly arrange the tomato slices in the baked shell. Season them with salt, pepper, basil, and chives.
  3. In a medium bowl, stir together the mayonnaise and grated cheese until smooth. Spread this mixture over the tomatoes.
Baking
  1. Bake for 30–35 minutes, or until the cheese is melted and lightly browned.

Notes

Tomato pie can be served warm or at room temperature. Pairs well with a simple green salad or crusty bread. Store leftovers in the fridge; consume within 3-4 days.
