  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
For the Dumplings
  • 1 cup shredded cheese (like cheddar or mozzarella)
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 tablespoon fresh herbs (like parsley or thyme), chopped
  • 1/2 cup milk

Preparation
  1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until soft.
  2. Stir in the crushed tomatoes and vegetable broth, then add salt, pepper, basil, and oregano. Bring to a simmer and cook for about 20 minutes.
Making the Dumplings
  1. In a bowl, combine flour, baking powder, shredded cheese, chopped herbs, and milk. Mix until combined.
  2. Drop spoonfuls of the dumpling mixture into the simmering soup.
  3. Cover and cook for an additional 15 minutes, or until dumplings are cooked through.
