  • 1 cup mixed dried fruits (e.g., raisins, currants, sultanas)
  • 1 cup chopped suet or butter
  • 1 cup brown sugar
  • 1 cup breadcrumbs
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 teaspoons mixed spice (cinnamon, nutmeg, etc.)
  • 1 teaspoon salt
  • 2 large eggs
  • 3/4 cup milk or stout
  • 1/4 cup brandy or whisky
  • 1 zest of 1 lemon
  • 1 zest of 1 orange

Method
 

Preparation
  1. In a large mixing bowl, combine the dried fruits, suet or butter, brown sugar, breadcrumbs, flour, baking powder, mixed spice, and salt.
  2. In another bowl, whisk together the eggs, milk, brandy, and citrus zest.
  3. Pour the wet ingredients into the dry ingredients and mix until well combined.
  4. Grease a pudding basin and spoon the mixture into it, leaving some space at the top for expansion.
  5. Cover the basin with parchment paper and foil, securing it tightly.
Cooking
  1. Steam the pudding for about 6 hours, adding water as needed.
  2. Allow to cool, then store in a cool place until ready to serve.
  3. To serve, steam the pudding again for 1-2 hours, then set alight with warmed brandy before serving.

Notes

Serve the Christmas pudding with a rich sauce, like brandy butter or cream. It can also be enjoyed with vanilla ice cream or custard. Use a variety of dried fruits for a richer flavor, and ensure to steam slowly for even cooking. Allow it to mature for a few days before serving for the best taste.
