  • 1.5 cups Greek yogurt
  • 1 cup granulated sugar
  • 3 large eggs Room temperature for better mixing
  • 0.5 cups vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 1 piece zest of lemon Can substitute with orange zest
  • to taste Powdered sugar For dusting (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, mix together the Greek yogurt, sugar, eggs, vegetable oil, and vanilla extract until smooth.
  3. In another bowl, whisk together the flour, baking powder, salt, and lemon zest.
  4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  5. Pour the batter into the prepared cake pan and smooth the top.
Baking
  1. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  2. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  3. Dust with powdered sugar before serving if desired.

Notes

Tips: Use room temperature eggs, don't overmix, and consider adding cinnamon for flavor. Fresh berries can enhance the cake's taste.
