Chocolate Cake Layer
  • 1.5 cups All-purpose flour
  • 1.5 cups Granulated sugar
  • 0.75 cup Unsweetened cocoa powder
  • 1.5 tsp Baking soda
  • 1 tsp Baking powder
  • 1 tsp Salt
  • 2 Large eggs
  • 1 cup Milk
  • 0.5 cup Vegetable oil
  • 2 tsp Vanilla extract
  • 1 cup Boiling water
Dark Chocolate Mousse
  • 8 oz Dark chocolate (70% cocoa)
  • 2 cups Heavy cream
  • 0.25 cup Granulated sugar
  • 3 Large egg yolks
Milk Chocolate Mousse
  • 8 oz Milk chocolate
  • 2 cups Heavy cream
  • 0.25 cup Granulated sugar
  • 3 Large egg yolks
White Chocolate Mousse
  • 8 oz White chocolate
  • 2 cups Heavy cream
  • 0.25 cup Granulated sugar
  • 3 Large egg yolks
Garnish (Optional)
  • 0.25 cup Chocolate shavings

Method
 

Chocolate Cake
  1. Preheat oven to 350°F (175°C) and prepare a 9-inch round cake pan by greasing and flouring it.
  2. Combine all dry ingredients in a large bowl, then add wet ingredients (eggs, milk, oil, vanilla) and mix until just combined.
  3. Gradually stir in boiling water to create a smooth batter, then pour into the prepared pan.
  4. Bake for 30-35 minutes until a toothpick comes out clean, then let the cake cool completely.
Mousse Preparation
  1. Melt dark chocolate, then whisk egg yolks and sugar until pale before gently folding in the melted chocolate.
  2. Whip heavy cream to stiff peaks and carefully fold it into the chocolate mixture until combined to create the dark chocolate mousse.
  3. Repeat the melting, whisking, and folding process with milk chocolate to prepare the milk chocolate mousse.
  4. Similarly, prepare the white chocolate mousse by following the same steps with white chocolate.
Assembly & Chilling
  1. Place the cooled chocolate cake in a 9-inch springform pan, then evenly pour the dark chocolate mousse over it and chill for 30 minutes until set.
  2. Once the dark mousse is set, add the milk chocolate mousse layer evenly and chill again for another 30 minutes.
  3. Finally, add the white chocolate mousse layer, spreading it evenly, and chill the entire cake for at least 4 hours or preferably overnight.
  4. Carefully remove the springform pan sides, garnish with chocolate shavings if desired, then slice and serve.

Notes

For best results, ensure each mousse layer is adequately chilled and set before adding the next to prevent mixing. A warm knife can help achieve clean slices.
