Ingredients

Meatball Mixture
  • 1 lb Ground turkey Use lean ground turkey for a healthier option.
  • 2 cups Fresh spinach Chopped.
  • 1/2 cup Breadcrumbs
  • 1 large Egg
  • 2 cloves Garlic (minced)
  • 1 small Onion (finely chopped)
  • 1 tsp Salt
  • 1/2 tsp Pepper
Creamy Sauce
  • 1 cup Cream or Greek yogurt To make the sauce creamy.
  • 1/2 cup Parmesan cheese Grated.
  • 2 tbsp Olive oil For sautéing.

Method

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground turkey, chopped spinach, breadcrumbs, egg, minced garlic, chopped onion, salt, and pepper. Mix until well combined.
  3. Shape the mixture into meatballs (about 1 inch in size) and place them on a baking sheet.
Cooking
  1. Bake for 20-25 minutes, until cooked through and golden brown.
  2. In a separate pan, heat olive oil over medium heat. Add in cream or Greek yogurt and Parmesan cheese to create a creamy sauce, stirring until combined.
Serving
  1. Serve the meatballs with the creamy sauce on top. These can be served over pasta, rice, or on a bed of leafy greens.

Notes

Use fresh spinach for better flavor and nutrients. Make sure to mix the ingredients well, but don't overmix, as it can make the meatballs tough. You can add herbs like parsley or basil for extra flavor.
