Preparing the Rub
- In a small bowl, combine all the rub ingredients: brown sugar, smoked paprika, kosher salt, black pepper, garlic powder, onion powder, dried thyme, dried rosemary, and cayenne pepper (if using).
- Mix thoroughly with a spoon or whisk until all ingredients are well combined and there are no clumps.
- Use immediately to season your turkey, or store for future use.
Notes
Store any leftover rub in an airtight container in a cool, dark place for up to 6 months. For best results, apply the rub generously under and over the skin of the turkey.
