Honey Lime Chicken
  • 2 lbs Chicken breasts boneless, skinless, cut into 1-inch pieces
  • 1/4 cup Honey
  • 2 tbsp Lime juice
  • 1 tsp Lime zest
  • 2 cloves Garlic minced
  • 1 tbsp Soy sauce
  • 1 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
Avocado Rice
  • 3 cups Cooked rice
  • 2 large Avocado diced
  • 1/4 cup Fresh cilantro chopped
  • 1 tbsp Lime juice
  • 1/4 tsp Salt
  • pinch Black pepper

Method
 

Preparations
  1. In a large bowl, whisk together honey, lime juice, lime zest, minced garlic, soy sauce, olive oil, salt, and pepper to create the marinade, then add the chicken pieces and let them marinate for 15-20 minutes.
  2. While the chicken marinates, cook rice according to package directions, then set it aside to cool slightly.
Cooking & Assembly
  1. Heat a large skillet over medium-high heat, add the marinated chicken, and cook for 5-7 minutes, stirring occasionally, until cooked through and lightly caramelized.
  2. In a separate bowl, combine the cooked rice with diced avocado, chopped cilantro, lime juice, salt, and pepper, gently mixing until well combined.
  3. To assemble, press a portion of avocado rice into a serving ring on a plate, then top with a generous amount of the cooked honey-lime chicken.
  4. Carefully remove the mold, garnish as desired, and serve immediately.

Notes

For best results, let the chicken marinate for at least 30 minutes, or even overnight. Adjust lime and honey to your taste.
