  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef or turkey Can substitute with ground chicken or plant-based meat
  • 1 can (14.5 oz) diced tomatoes
  • 1 head of cabbage, chopped
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup beef broth Can substitute with chicken or vegetable broth
  • 1 cup shredded cheese (optional) Feel free to use a combination of cheeses

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat some oil over medium heat. Add the chopped onions and minced garlic, and sauté until softened.
  3. Add the ground beef or turkey and cook until browned.
  4. Stir in the diced tomatoes, chopped cabbage, and paprika. Season with salt and pepper. Mix everything well.
  5. Pour in the beef broth and let it simmer for about 10 minutes.
Baking
  1. Transfer the mixture to a baking dish. If you want, sprinkle shredded cheese on top and cover with foil.
  2. Bake in the oven for 30-35 minutes, removing the foil in the last 10 minutes to brown the cheese.
  3. Serve warm and enjoy your low-carb casserole!

Notes

Unstuffed Cabbage Casserole is best served warm. Enjoy it on its own or pair it with a fresh side salad or some crusty bread. For an extra touch, sprinkle some fresh herbs or extra cheese on top just before serving. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to three months.
