Ingredients
  

For the cream mixture
  • 2 cups mascarpone cheese Make sure it's at room temperature.
  • 1 cup heavy cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract Or substitute with almond extract for variation.
For the soaking mixture
  • 1 cup brewed coffee, cooled Use a darker roast for stronger flavor.
  • 1/2 cup coffee liqueur Optional
For layering
  • 1 package ladyfinger cookies
  • Cocoa powder for dusting
  • Chocolate shavings for garnish Optional

Method
 

Preparation of Cream Mixture
  1. In a mixing bowl, combine the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Whip until smooth and thick.
Preparation of Soaking Mixture
  1. In a shallow dish, combine the brewed coffee and coffee liqueur.
Layering
  1. Dip each ladyfinger briefly into the coffee mixture.
  2. Layer half of the dipped ladyfingers in the bottom of a baking dish.
  3. Spread half of the mascarpone mixture over the ladyfingers.
  4. Repeat the process with the remaining ladyfingers and mascarpone mixture.
Chilling
  1. Cover and refrigerate for at least 4 hours, preferably overnight.
Serving
  1. Before serving, dust with cocoa powder and garnish with chocolate shavings, if desired.

Notes

Store any leftover cake in an airtight container in the refrigerator for about 3 to 5 days. The flavors will continue to meld, making it tastier the next day. For added freshness, consider adding a layer of sliced fruits, like strawberries or bananas, between the mascarpone layers.
