- Melt the dark chocolate chips in a microwave-safe bowl. Heat them in 30-second increments, stirring in between, until completely melted.
- In a blender or food processor, combine the silken tofu, melted chocolate, maple syrup, vanilla extract, and a pinch of salt.
- Blend until the mixture is smooth and creamy.
- Taste and adjust sweetness if needed by adding more maple syrup.
- Spoon the mousse into serving dishes and refrigerate for at least 30 minutes before serving.
Notes
Serve chilled in small bowls or glasses. Top with fresh berries, coconut whipped cream, or a sprinkle of cocoa powder for extra flair. Store any leftovers in an airtight container in the refrigerator for up to 3 days, stirring before serving again if needed.
