  • 1.5 cups oat flour
  • 0.5 cup almond butter
  • 0.33 cup maple syrup
  • 1 large egg
  • 1 tsp vanilla extract
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.5 cup dark chocolate chips sugar-free or low-sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the oat flour, baking soda, and salt.
  3. In a separate large bowl, combine the almond butter, maple syrup, egg, and vanilla extract; mix until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined, then fold in the dark chocolate chips.
  5. Drop rounded spoonfuls of dough onto the prepared baking sheet, leaving some space between each cookie.
  6. Bake for 9-12 minutes, or until the edges are lightly golden, then let them cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For extra flavor, you can add a pinch of cinnamon or a dash of almond extract to the dough.
