Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the oat flour, baking soda, and salt.
- In a separate large bowl, combine the almond butter, maple syrup, egg, and vanilla extract; mix until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined, then fold in the dark chocolate chips.
- Drop rounded spoonfuls of dough onto the prepared baking sheet, leaving some space between each cookie.
- Bake for 9-12 minutes, or until the edges are lightly golden, then let them cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For extra flavor, you can add a pinch of cinnamon or a dash of almond extract to the dough.
