Preparations
- Boil whole oranges in water for 1.5-2 hours until very soft, then cool and quarter them, removing any seeds.
- Preheat oven to 350°F (175°C) and grease/line a 9-inch springform pan.
Cake Batter
- Process the cooled, quartered oranges in a food processor until smooth.
- In a large bowl, whisk eggs and sugar until light and fluffy, then stir in the pureed orange and melted butter.
- Sift flour and baking powder into the wet ingredients and fold gently until just combined.
Baking
- Pour the batter into the prepared pan and bake for 60-70 minutes, or until a skewer comes out clean.
- Let the cake cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
Notes
For best results, ensure the oranges are well-boiled and cooled before blending to prevent bitterness and achieve a smoother batter. A light glaze of powdered sugar and orange juice can be added once cooled for extra zest.
