  • 4 medium potatoes, diced
  • 1 piece onion, chopped
  • 3 pieces carrots, sliced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk or cream For creaminess

Method
 

Preparation
  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add the diced potatoes, chopped onion, sliced carrots, and minced garlic.
  3. Pour in the chicken broth and season with salt and pepper.
Cooking
  1. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through.
  2. Remove the chicken, shred it, and return to the pot.
  3. Stir in the milk or cream to add creaminess.
Serving
  1. Garnish with fresh parsley before serving.

Notes

Cut the vegetables into even pieces to ensure they cook uniformly. For a thicker soup, mash some of the potatoes before adding the milk or cream. Adjust the seasoning as needed.
