Ingredients
  

Main Ingredients
  • 1 cup unsalted butter, softened Must be softened, not melted.
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt Reduce if using salted butter.
  • 2 cups semi-sweet chocolate chips
  • 1/2 cup white chocolate chips
  • 1/2 cup crushed peppermint candies Can adjust amount for less peppermint flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs and vanilla extract until well combined.
  4. In another bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  6. Fold in the semi-sweet chocolate chips, white chocolate chips, and crushed peppermint candies.
  7. Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.
Baking
  1. Bake in the preheated oven for about 10 to 12 minutes, or until the edges are lightly golden.
  2. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.

Notes

Store cookies in an airtight container at room temperature for about a week, or freeze them for up to three months.
