  • 1 cup all-purpose flour
  • 1 cup milk
  • 3 large eggs
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil or drippings Use the drippings for extra flavor.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine the flour and salt.
  3. In another bowl, whisk together the eggs and milk.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until smooth.
  5. Let the batter rest for about 30 minutes.
Baking
  1. In a muffin tin, add a small amount of oil or drippings to each cup and heat in the oven for 5-10 minutes until hot.
  2. Pour the batter into the hot oil, filling each cup about halfway.
  3. Bake for 20-25 minutes or until the puddings are puffed and golden brown.
Serving
  1. Serve immediately, ideally with roast beef, gravy, and vegetables.

Notes

Best enjoyed hot and fresh. Ensure oil is extremely hot for proper rising. Avoid opening the oven door during baking.
