Ingredients
  

For the Chicken Satay
  • 1 pound chicken breast, cut into strips
  • 1 tablespoon soy sauce
  • 1 tablespoon vegetable oil
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground ginger
  • to taste salt and pepper
  • Skewers (soaked in water if wooden)
For the Peanut Sauce
  • 1/2 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1/2 cup coconut milk
  • to taste chili flakes

Method
 

Marination
  1. In a bowl, combine soy sauce, vegetable oil, sesame oil, garlic, ginger, salt, and pepper. Add chicken strips and marinate for at least 30 minutes.
Skewering and Grilling
  1. Thread the marinated chicken strips onto skewers.
  2. Preheat the grill or grill pan over medium-high heat. Cook the chicken skewers for about 5-7 minutes on each side until fully cooked and golden brown.
Preparing the Peanut Sauce
  1. In a saucepan over low heat, combine peanut butter, soy sauce, honey, lime juice, and coconut milk. Stir until smooth and heated through. Adjust spice level with chili flakes.
Serving
  1. Serve the chicken satay hot off the grill with the peanut dipping sauce on the side.

Notes

To store any leftovers, place the chicken satay and peanut sauce in separate airtight containers. They can be kept in the refrigerator for up to three days. For best results, defrost marinated chicken in the refrigerator before cooking.
