Ingredients
  

For the marinade
  • 1 lb boneless chicken thighs
  • 1 teaspoon cornstarch
  • 1/4 cup light soy sauce
  • 1 teaspoon sesame oil
  • 2 teaspoons sugar (or honey)
  • 1 tablespoon rice apple vinegar (optional) Optional for added flavor.
For the stir fry
  • 1 medium zucchini Sliced for cooking.
  • 3 cloves garlic Smashed.
  • 1 tablespoon cooking oil For sautéing.
  • 1 tablespoon oyster sauce
  • to taste Ground black pepper Optional.

Method
 

Preparation
  1. Cut the chicken into bite-sized pieces and marinate it with cornstarch, soy sauce, sesame oil, sugar (or honey), and rice apple vinegar for at least 30 minutes.
Cooking
  1. Heat oil in a wok over medium-high heat.
  2. Sauté smashed garlic until fragrant, then add the marinated chicken and cook for about 2 minutes.
  3. Remove the chicken from the pan and add sliced zucchini. Stir-fry for 5 minutes until the zucchini is tender.
  4. Combine the chicken with the zucchini. Add oyster sauce and pepper if desired, stir-frying for another 2-3 minutes until everything is fully cooked.
Serving
  1. Serve hot over rice or noodles for a complete meal.

Make sure to slice the zucchini evenly for consistent cooking. You can add other vegetables like bell peppers or broccoli to enhance the dish's nutrition and flavors.
