- In a mixing bowl, combine shredded coconut, sweetened condensed milk, and vanilla extract. Stir until well mixed.
- Chill the mixture in the refrigerator for about 30 minutes to make it easier to handle.
- Once chilled, scoop small amounts of the mixture and roll into balls.
- If desired, roll some of the balls in cocoa powder, while others can be rolled in additional shredded coconut.
- Place snowballs on a baking sheet lined with parchment paper.
- Allow them to set for at least an hour before serving.
Notes
Store in an airtight container in the refrigerator for up to one week, or freeze with parchment paper between layers to prevent sticking. Chill the mixture thoroughly to make rolling easier.
