Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together the eggs, melted butter, orange juice, and orange zest.
- Pour the wet ingredients into the dry ingredients and fold in the chopped cranberries until just combined.
- Pour the batter into the prepared loaf pan and sprinkle sparkling sugar on top.
Baking
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Slice and enjoy!
Notes
Store in an airtight container at room temperature for about 3-4 days. Can be frozen for up to 3 months. Serve plain or with butter; pairs well with tea or coffee.
