  • 2 cups all-purpose flour
  • 1 cup fresh cranberries, chopped Use fresh for best flavor.
  • 1 cup sugar
  • 1/2 cup orange juice
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tablespoon orange zest
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • sparkling sugar, for topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, melted butter, orange juice, and orange zest.
  4. Pour the wet ingredients into the dry ingredients and fold in the chopped cranberries until just combined.
  5. Pour the batter into the prepared loaf pan and sprinkle sparkling sugar on top.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  3. Slice and enjoy!

Notes

Store in an airtight container at room temperature for about 3-4 days. Can be frozen for up to 3 months. Serve plain or with butter; pairs well with tea or coffee.
