  • 1 cup cherries, pitted and halved Can substitute with other fruits if desired.
  • 1/4 cup sugar Adjust based on fruit sweetness.
  • 1 tablespoon cornstarch Helps thicken the fruit filling.
  • 1 teaspoon vanilla extract Adds flavor to the filling.
  • 1 pinch salt Enhances the flavors.
Crust and Topping
  • 1 pre-made pie crust pie crust Chilled before rolling out.
  • 1 egg egg (for egg wash) Gives the crust a nice golden color.
  • 1 tablespoon butter (for dotting) Adds richness to the filling.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the blueberries, cherries, sugar, cornstarch, vanilla extract, and salt.
  3. Roll out the pie crust on a baking sheet.
  4. Pour the fruit mixture onto the center of the pie crust, leaving a border.
  5. Fold the edges of the crust over the fruit, pleating as you go.
  6. Brush the crust with egg wash and dot the fruit with butter.
Baking
  1. Bake for 25-30 minutes or until the crust is golden brown and the fruit is bubbly.
  2. Let cool slightly before serving.

Notes

Serve this galette warm or at room temperature. It pairs well with vanilla ice cream or whipped cream. Store leftovers in an airtight container for up to two days at room temperature or up to five days in the refrigerator.
