Ingredients
  

For the Shrimp and Veggies
  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil For cooking
  • 1 medium bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fajita seasoning
  • Juice of 1 lime
  • to taste Salt and pepper
For Serving
  • 2 cups cooked rice Can be white or brown rice
  • to taste Fresh cilantro for garnish

Method
 

Cooking
  1. In a large skillet, heat olive oil over medium heat.
  2. Add the sliced onion and bell pepper, cooking until tender.
  3. Stir in garlic and cook for an additional minute.
  4. Add shrimp and fajita seasoning, cooking until shrimp are pink and cooked through.
  5. Mix in the cooked rice and lime juice, stirring until heated through.
  6. Season with salt and pepper, and garnish with fresh cilantro before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the microwave or on the stove until warmed through. Customization tips: add zucchini, corn, or jalapeƱos for additional flavor.
