Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a small saucepan, melt the butter over medium heat until it turns brown and has a nutty aroma.
- In a large bowl, mix the browned butter, brown sugar, granulated sugar, and vanilla extract until smooth.
- Beat in the eggs one at a time.
- In another bowl, whisk together the flour, baking powder, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture.
- Gently fold in the diced peaches.
Baking
- Pour the batter into the prepared pan.
- For the streusel, mix oats, brown sugar, flour, and cinnamon in a bowl, then sprinkle over the top of the batter.
- Bake for 30-35 minutes or until golden and a toothpick comes out clean.
- Let it cool before slicing into bars and serving.
Notes
These bars are great served warm or at room temperature. Top with a scoop of vanilla ice cream for a delightful dessert. Store them by covering with plastic wrap or in an airtight container.
