Ingredients
  

For the bars
  • 2 cups fresh peaches, peeled and diced Use ripe peaches for the best flavor.
  • 1/2 cup unsalted butter Melt until browned.
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 1/2 cups all-purpose flour Can substitute with gluten-free flour blend.
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
For the streusel topping
  • 1/2 cup oats Add more for a thicker streusel.
  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a small saucepan, melt the butter over medium heat until it turns brown and has a nutty aroma.
  3. In a large bowl, mix the browned butter, brown sugar, granulated sugar, and vanilla extract until smooth.
  4. Beat in the eggs one at a time.
  5. In another bowl, whisk together the flour, baking powder, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture.
  6. Gently fold in the diced peaches.
Baking
  1. Pour the batter into the prepared pan.
  2. For the streusel, mix oats, brown sugar, flour, and cinnamon in a bowl, then sprinkle over the top of the batter.
  3. Bake for 30-35 minutes or until golden and a toothpick comes out clean.
  4. Let it cool before slicing into bars and serving.

Notes

These bars are great served warm or at room temperature. Top with a scoop of vanilla ice cream for a delightful dessert. Store them by covering with plastic wrap or in an airtight container.
